i5 2500k beats i7 2600k in games.
i7 wins in other things like rendering etc.

People are misunderstood sometimes. A i5 can't never beat an i7, this in terms of applications that use a lot of raw power, the only way to any i5 beat an i7 in games is that if the i5 is running with higher clock, yes in that case the i5 will beat, but when they are both at same clock they are equal. At the moment there isn't games that make a fully use of a Quad Core, thats why even AMD's Quadcores are still ok for games.

Then the new sandy bridges are amazing but its not their full power, its the ability of their Overclock since they are 32mn. The old i5 750 versus i5 2500k, if they are on same clock, their performance will be equal in most times, few exceptions in programs like Cinebench, where the 2500k takes advantage). This same applies to the i7 2600k and i7 920 from socket 1366 and the Lynnfields from socket 1156, the i7 860s.

Since the i7 is often way more expensive (depends in which shop) I would suggest you i5 2500k.
Buy cheaper, overclock, rape.
